At first sight kazari-sushi look like ordinary rolls. But being cut they show us wonderful patterns or even whole pictures composed of many ingredients. For many years kazari
(the English translation is "decoration") have been part of traditional sushi culture. The interest in this kind of rolls has risen lately in Japan and all over the world.
Kazari-sushi are cooked both for festival events such as Girl's Day and Boy's Day and meditative pleasure. Children like this kind of sushi very much. The Japanese say that the view and taste of kazari-sushi brings them additional joy and happiness. Kazari-sushi will decorate any table and add some creativity to any meal.
"Japan House" has the pleasure to introduce you the first Russian chef who gained kazari-sushi certificate in Japan. Alexander Dehtyaruk has been working in "Japan House" for 7 years.
Here is a simple recipe of kazari-sushi from our certificated chef. "BEAR" Ingredients:
Rice for sushi - 330 g
Nori (dry seaweed) - 3 plates (19x21 cm)
Carrot - 2 it.
First of all let's cook rice for sushi. You will find a detailed instruction here.
The neb of the bear consists of several parts: ears, nose, eyes and pupils, smile and the head itself. 60 g of rice are to be left white, while 270 g - to be painted brown with color. As a color tsukudani-ami is used. Dark kidney beans may be used as well. For that purpose they must be boiled it and grated.
Let's first cook the parts of the form. 1. Ears: wrap two parts of painted rice (20 g each) in nori so that they look like little rolls. 2. Eyes: wrap two parts of painted rice (30 g each) in nori so that they look like little rolls. 3. Nose: wrap a small thin carrot in nori. 4. Smile: wrap 30 g of painted rice in nori and cut it along in two.
Now you may start making the form. Take half of a nori leaf and stick 1/3 of the second half so you have a long nori leaf. Put 100 g of painted rice on it and spread it on the surface leaving 4 cm space on each side.
Put the earlier prepared parts on the rice. Put eyes in the middle leaving space between them and filling it with rice. Put nose and then smile. Cover everything with rice and make the whole form round. Then cut a circle roll and slice it.
Cut carrot to make pupils.
Separatly cut ears and stick them to the neb. The bear is ready. * Ingredients can be replacesed.
