A traditional Japanese dish sushi is very popular all over the world. It mainly made by a slice of fish, sea food or vegetable and rice with Japanese vinegar (sushi-no moto). It is very difficult to imagine Japanese cuisine without sushi.

The history of sushi began in Asia about IV century B.C. Many years ago fish was very important for people, and it was important to keep it fresh for a long time. Natural fermentation of rice prolonged storage period of fish. It could be used for several months but the rice in which it was stored was thrown away.

In VIII century this way of fish keeping came up in Japan. And by little and little the Japanese began to eat fish with rice. Still now, It is possible to find the traditional sushi which is called Inarizusi among the restaurants in Tokyo.

Sushi is prepared with bare hand of the cook. One of the main secret of the Japanese cooks is to keep his palm's temperature on rise and fish that he is rolling.

They serve sushi only in double with marinated ginger and pungent Japanese seasoning wasabi. These two seasonings neutralize after-taste and fix-up the digestion.

You should eat sushi, dipping fish (not rice!) in soy-bean sauce with wasabi in it and taking the ginger after it.

The other favorite snack in Japan is sashimi - thin slice of saltwater fish or maritime animals. Sashimi is made of raw fish. But if sashimi is made of raw alive fish, the dish is called ikizukuri (literally "still alive"). It is the most expensive and refined dish for holidays and the most respected guests.
